1 cup sugar
1 egg slightly beaten
½ cup melted shortening
1/3 cup molasses
2 tsp. soda
½ tsp. ginger
½ tsp. cinnamon
½ tsp. salt
2 cup sifted unbleached all-purpose flour
Mix sugar and eggs in bowl. Add shortening and molasses; mix well. In a separate bowl, combine soda, ginger, cinnamon, salt and flour; added flour mixture to sugar mixture until mixed. Shape into walnut size balls; rolling in additional sugar. Place on ungreased cookie sheets. Bake at 375º for 10 to 12 minutes. DO NOT substitute oil for melted shortening. Yields 2 dozen
