SAM’s Chuck Roast and Red Wine Thoop


Ingredients:

3 lbs. chuck roast cut into 1” cubes

2 - 26 oz. cans of cream of mushroom soup

26 oz. water (One of the above cans...)

2 - 12 oz. jars of Heinz Homestyle Savory Beef Gravy

2 - 9.9 oz. jars of Giorgio sliced mushrooms

1 large onion, quartered and sliced into ˝ wide strips

4 tbs. olive oil

oregano

salt

pepper

1 cup (or more, to taste) of favorite red wine (NOT cooking wine!)



Directions:

In a 5 qt. non-stick soup pot, sauté onion in 2 tbs. oil until almost translucent. Add a layer of chuck roast, sprinkle with salt and pepper. Continue until all beef is in pot. Drizzle with remaining oil and oregano. Stir constantly until medium rare. Place this mixture in a large crock-pot. Add remaining ingredients and stir well. Cook for 10 hours on low, stirring every hour or so.
